Description: Spelled of Monteleone di Spoleto PDO is a local variety of the species Triticum dicoccum. The pedoclimatic conditions of the production area define its characteristics: flat, short, tapered and vitreous and compact kernels with floury residues to fracture, the color is amber. The plant is cold-resistant, suitable for poor soils, cultivated in a mountain area with long and harsh winters. It was already cultivated by the Etruscans and Romans (beans found in Etruscan Biga).
